Ingredients
1 tbsp Bowl & Basket vegetable oil
1 large onion, chopped
1 tbsp garlic, minced
2 Bowl & Basket eggs, slightly beaten
2 cups leftover turkey, chopped or shredded
3 cups Bowl & Basket rice, cooked
2 tsp sesame oil
ÂĽ cup soy sauce
1 bag Bowl & Basket frozen peas and carrots mix
Âľ tsp seasoned salt
½ tsp ground black pepper
ÂĽ cup freshly chopped cilantro
½ cup chopped scallions, plus more for topping
Sesame seeds, for serving (optional)
Directions
  1. Heat vegetable oil in a large wok or skillet over medium heat. Add onion and garlic and sauté 2-3 minutes or until fragrant. Push to the side of the skillet, then add eggs and scramble until just set, about 30-60 seconds.
  2. Stir in turkey and mix everything well until turkey is heated through, then stir in rice, sesame oil, soy sauce, frozen vegetables and salt and pepper. Stir fry 2-3 minutes or until everything is heated through and well mixed. Add in chopped cilantro and green onions and mix until well distributed.
  3. Serve with additional chopped scallions and sesame seeds, if desired.
