Ingredients
1 jar Barilla® Rustic Basil Pesto
1 Baguette, halved
2 tablespoons Extra Virgin Olive Oil
3 Heirloom Tomatoes, sliced thin
1½ cups Arugula
2 cups Fresh Mozzarella (one 8-oz ball)
1 tablespoon Balsamic Glaze
Directions
- Preheat oven to 425° F. Drizzle baguette with olive oil and place in the oven to toast for 4-5 min.
- Spread pesto on top and bottom of baguette. Arrange the bottom of baguette with tomatoes, arugula, mozzarella, and a drizzle of balsamic glaze. Cover with top of baguette. Cut into four equal sandwiches.
