1 tbsp Bowl & Basket vegetable oil
1 large onion, chopped
1 tbsp garlic, minced
2 Bowl & Basket eggs, slightly beaten
2 cups leftover turkey, chopped or shredded
3 cups Bowl & Basket rice, cooked
2 tsp sesame oil
ÂĽ cup soy sauce
1 bag Bowl & Basket frozen peas and carrots mix
Âľ tsp seasoned salt
½ tsp ground black pepper
ÂĽ cup freshly chopped cilantro
½ cup chopped scallions, plus more for topping
Sesame seeds, for serving (optional)
Directions
- Heat vegetable oil in a large wok or skillet over medium heat. Add onion and garlic and sauté 2-3 minutes or until fragrant. Push to the side of the skillet, then add eggs and scramble until just set, about 30-60 seconds.
- Stir in turkey and mix everything well until turkey is heated through, then stir in rice, sesame oil, soy sauce, frozen vegetables and salt and pepper. Stir fry 2-3 minutes or until everything is heated through and well mixed. Add in chopped cilantro and green onions and mix until well distributed.
- Serve with additional chopped scallions and sesame seeds, if desired.
