Ingredients
3 medium Russet potatoes, peeled, boiled and mashed
3/4 cup low-sodium chicken broth
2 Tbs olive oil
1 lb 93% lean ground turkey
1 small onion, finely chopped
2 garlic cloves, minced
2 Tbs chopped fresh thyme or sage
3/4 cup whole-wheat panko bread crumbs
1 egg
Directions

1. Preheat oven to 450°F. Line a large baking sheet with parchment paper. In a large bowl combine mashed potatoes, broth, and salt and pepper to taste; set aside.

 

2. In a large nonstick skillet heat oil over medium-high heat. Add turkey, onion and garlic; cook over medium heat 8 minutes or until meat is browned and onion is tender, stirring to break up turkey. Remove from heat. Season with salt and pepper to taste, and stir in thyme. Let cool completely.

 

3. Add turkey to mashed potatoes; mix well. Form into 18 (¼-cup) croquettes. Place croquettes on wax paper. Place panko in a shallow dish. Lightly beat egg in a second dish. Working with one croquette at a time, dip in egg, then roll in panko, pressing firmly to coat. Place on prepared baking sheet. Repeat with remaining croquettes.

 

4. Lightly coat croquettes with nonstick cooking spray. Bake 15 minutes or until golden brown. Serve immediately.
