Since its inception in 2000, the Blue Hill Bay line has adopted traditional methods of curing and smoking salmon - techniques employed in Europe for generations. Our distinct smoked salmon process begins with the freshest salmon available. After a special dry curing process is completed, sides of salmon are cold smoked with a unique blend of hardwoods. The salmon are trimmed by hand, packed, chilled and delivered to their markets soon after leaving the smokehouse. The Blue Hill Bay line is complemented by a full assortment of smoked wild salmon and specialty smoked fish such as smoked fish poke bowls, sashimi style smoked salmon, trout, whitefish, wild Alaskan black cod, smoked fish salads and pickled herring. Astaxanthin is a carotenoid used in the feed of farm raised Atlantic Salmon; it is in the same family as Vitamin A. Carotenoids are part of the natural diet consumed by salmon in the wild and give salmon its distinctive color.
